Marinated steak tacos. Served best with Pico De Gallo

Pico De Gallo Recipe

Mojo Notes

  • Feel free to skip the White Vinegar for a less tangy taste
  • A Tangelo works great!
  • Marinading in a zipbloc bag works

Carne Asada Tacos Notes

  • Any type of tortilla will work, I’ve tried burrito size flour tortillas.
  • Marinade time should be at least 2 hours, no more than 8 hours

Ingredients
  

Mojo (marinade)

  • 4 count Garlic Cloves (minced)
  • 1 count Jalapeno (minced)
  • 1 Large handful of Fresh Cilantro Leaves (finely chopped)
  • Kosher Salt and Black Pepper (to taste)
  • 2 count Limes (juiced)
  • 1 count Orange (juiced)
  • 2 tbsp White Vinegar
  • 0.5 cup Olive Oil

Carne Asada Tacos

  • 2 lb Flank or Skirt Steak (most cuts will work, thick cuts will take longer)
  • 1 recipe of Mojo (marinade, recipe above)
  • Kosher Salt and Ground Black Pepper (to taste)
  • 16 count 7-inch corn tortillas (any size or any kind of tortilla will work)
  • Shredded Romaine or Iceberg lettuce (for serving)
  • Shredded Jack Cheese (for serving)
  • 0.5 cup Pico de Gallo (recipe in notes)
  • 2 count Limes (wedges, for serving)

Instructions
 

Mojo Marinade

  • In a mortar and pestle, or bowl. Mash the Garlic, Jalapeno, Cilantro, Salt, and Pepper to make a paste.
  • Put the paste in a small container (that has a lid!) and add the lime juice, orange juice, vinegar, and oil.
  • Shake the container to combine the marinade.

Steak

  • Lay the steak in a large baking dish and pour the Mojo over it. Wrap tightly in plastic wrap and refrigerate for 2 - 8 hours. (The longer the better, but do not marinade longer than 8 hours, the meat will get mushy)
  • Preheat an outdoor grill or a pan over medium high flame. Brush the grates / pan with olive oil to prevent sticking.
  • Season both sides of the Steak with Kosher Salt and Pepper.
  • Grill the steak for 7 - 10 minutes per side, turning only once. Steak should be Medium Rare.
  • When done cooking, move the steak to a cutting board. Let the meat rest for 5 minutes.
  • Thinly slice the steak across the grain diagonally.

Building the Tacos

  • Warm the tortillas for 30 seconds in a dry skillet or on the grill
  • Stack two tortillas (when using corn tortillas), lay a few strips of steak in the center. Sprinkle with lettuce, onion, cheese, and add a spoonful of Pico de Gallo. Add sour cream if you like.
